A santoku in Japanese three-layer Damascus: a hard core for the edge, two softer layers to carry it. The handle in olive wood and water-buffalo horn grew the way it is now; no second one will ever match it. A knife for vegetables, fish and meat, for everything that lands on a board.

Care
After use, wipe by hand, wash and dry immediately; never in the dishwasher. Before storing, rub in a thin film of mineral oil or camellia oil: it protects blade and handle and keeps olive wood and horn from drying out. Cut on wood or plastic, not on ceramic or stone. The patina that forms over time is normal and gives extra protection against rust.
